Gluten Free S’mores Parfaits

INGREDIENTS

CHOCOLATE PUDDING LAYER 1/4 cup (35 g) xanthan gum-free gluten free flour blend (23 grams superfine white rice flour + 8 grams potato starch + 4 grams tapioca starch/flour)

sugar

4 tbsp

Dutch-processed unsweetened cocoa powder (I use Rodelle brand, and I buy it on amazon)

1/4 tsp

kosher salt

3 cups

milk (any kind), at room temperature

egg yolks (90 g total), at room temperature

3 oz

dark chocolate, chopped (or your favorite chocolate)

2 tbsp

unsalted butter, chopped

1 tsp

pure vanilla extract

MARSHMALLOW FLUFF LAYER 1 1/4 cups (250 g) sugar

1/2 cup

water

1/8 tsp

cream of tartar

1/8 tsp

kosher salt

egg whites (60 g), at room temperature

1 tsp

pure vanilla extract

GRAHAM CRACKERS I used the round graham crackers I made for the Gluten Free Mallomars in Classic Snacks, but the Chocolate Graham Crackers from the blog would be excellent here)
