Healthy, Make-Ahead Sausage and Egg Breakfast Casserole

INGREDIENTS

Breakfast Sausage:

1 1/4 lb

ground turkey (1 package)

1 tbsp

dried, rubbed sage

1/2 tsp

salt

1/4 tsp

garlic powder

1 tbsp

pure maple syrup

1/4 tsp

nutmeg

plenty of black pepper!

Casserole:

4 cups

cubed par-cooked potatoes (such as refrigerated Simply Potatoes or frozen Ore-Ida southern-style hashbrowns, thawed)

Cooked and crumbled breakfast sausage (entire recipe)

4 cups

chopped veggies of your choosing - I used 1 cup onions, 1 cup each of red and green bell pepper, and 1 cup of sliced mushrooms

3 cups

shredded sharp cheddar cheese

12

large eggs

2 cups

plain unsweetened almond milk

1/4 tsp

salt

black pepper, as much as you like

your favorite hot sauce, for serving (optional but delicious!)
