of a small red onion, chopped

jar (12 oz.) roasted red peppers, drained well and chopped

low-sugar Salsa Verde (Be sure to check that the salsa verde doesn’t have a lot of added sugar if you’re making this for a low-carb breakfast.)

grated Mexican blend cheese

salt and fresh-ground black pepper

chopped cilantro for serving (optional)
