Baked Potato “Salad” with White Cheddar Cheese

canola our olive oil or garlic infused olive oil

kosher salt

garlic powder

pepper

applewood smoked bacon, diced/cooked crisp and drained

2 cups

sour cream

1 cup

scallions, thinly chopped

16 ozs

(2 cups) sharp white cheddar cheese, shredded (Use “Coastal Rugged Mature Cheddar” by Ford Farm (Blue Package) from Costco or other aged block white cheddar.)

1 cup

butter (2 cubes)
