Canned Fire roasted San Marzano whole Tomatoes
3 cloves
Garlic
1/4 cup
Balsamic vinegar
1 (16 oz)
Bag Penne or Ziti pasta
2 smalls
Zuchinni
2 smalls
Yellow squash
1 (8 oz)
Diced mushrooms
1 (9 Oz)
Baby Spinach (Enough to make one layer of 9x12 pan)
Salt/Pepper
1 (16 oz)
Shredded Mozzarella cheese
NOTES
You can use any 28 Oz can of tomatoes. I just like the flavors of roasted San marzano. You can also add diced eggplant to veggies
