Colorful Quinoa Salad

INGREDIENTS

8 cups

Cooked quinoa

2 15 ozs

Cans of black beans

2 cups

Frozen corn, thawed

1 cup

Chopped celery

3/4 cup

Chopped green onions

2 culs

Cherry tomatoes, halved

2 bunches

Cilantro, chopped

Red pepper, diced

Yellow pepper, diced

Orange pepper, diced

3/4 cup

Red wine vinegar

2/3 cup

Olive oil

1 1/2 Ts

Tabasco sauce

2 tsps

Salt

1 4oz

Can diced jalapeños


NOTES

  • For the Dressing: 3/4 cup - red wine vinegar 2/3 cup - olive oil 1 ½ tablespoon - Tabasco sauce 2 tsp - salt (you may need more after depending on taste) 1 - 4oz can diced jalapeños Whisk all the ingredients together.
