1 cup

lentils (rinsed & picked over)

bay leaf

4 cups

water

small tomatoes (I used brown tomatoes, diced)

medium english cucumber (diced)

juice of 2 lemons

~ 2 Tablespoons extra virgin olive oil

salt and pepper (to taste)

(reduced fat feta cheese, to taste)
