Creole Gumbo

altered from my mom's cookbook

INGREDIENTS

1/2 cup

onion, chopped

1 clove

garlic, minced

3 Ts

butter

3 Ts

flour

16 ozs

canned tomatoes, diced

1 1/2 cups

water

1/2 cup

green pepper, chopped

2

bay leaves

1 t

oregano, dried and crushed

1 t

thyme, dried

1/2 t

salt

1/2 t

hot pepper sauce

10 ozs

okra, fresh or frozen and cut up

chicken, cooked and cut up


NOTES

  • The original recipe calls for shrimp and crab instead of chicken. The instructions for the seafood are as follows: After adding and cooking the okra add two 4 1/2 oz cans of shrimp, drained. Stir in 7 oz can of crab meat (drained, flaked, and cartilage removed) into okra mixture.
