Mel’s Slow Cooker Butter Chicken

INGREDIENTS

1 medium

Yellow onion, chopped

1 Tbs

Fresh ginger, finely chopped

2 cloves

Garlic, finely minced

Jalapeño, seeded, and finely chopped

1 Tbs

Coconut oil (or olive)

2 tsps

Garam masala

1 tsp

Chili powder

1 tsp

Cardamom

1/2 tsp

Coriander

1 can (6 oz.)

Tomato paste

1 can (14 oz)

Coconut milk (full fat)

1/2 cup

Chicken broth

1/2 cup

Fat-free or regular half-and half (or heavy cream)

1 1/2 lbs

Boneless, skinless chicken breasts (about 2-3) or chicken thighs

1/2 tsp

Black pepper

1 tsp

Salt

3 Tbs

Butter

Juice of one lime

Cilantro for garnish

Hot cooked jasmine rice for serving


NOTES

  • Try adding diced potatoes with the chicken, and/or peas in the last ten minutes. Serve with roasted broccoli or cauliflower.
