Coconut milk (full fat)

Chicken broth
1/2 cup
Fat-free or regular half-and half (or heavy cream)
1 1/2 lbs
Boneless, skinless chicken breasts (about 2-3) or chicken thighs
1/2 tsp
Black pepper
1 tsp
Salt
3 Tbs
Butter
Juice of one lime
Cilantro for garnish
Hot cooked jasmine rice for serving
NOTES
Try adding diced potatoes with the chicken, and/or peas in the last ten minutes. Serve with roasted broccoli or cauliflower.
