This may be the best chicken I have made in a long time! The juicy rosemary chicken with the lemony creaminess of the risotto is such a good combo. We will definitely make this again. See my notes on the recipe for a few more thoughts.
The chicken is amazing, and the risotto is good. We are going to try burrata or fresh mozzarella in place of marscapone next time to add a bit more creaminess and texture to the risotto.
Lemon risotto
I’m a very novice cook so take this with a grain of salt - the risotto recipe wasn’t super clear for me and the flavor wasn’t my favorite. The chicken was fine.
