Blueberry Banana Zucchini Bread

light brown sugar, packed

canola or vegetable oil

1/4 cup

granulated sugar

1/4 cup

cup sour cream (lite is okay; or Greek yogurt may be substituted)

teaspoon vanilla extract

1 1/4 cups

all purpose flour + 1/4 cup for tossing with blueberries

 teaspoon baking powder

 teaspoon baking soda

1/4 tsp

salt, or to taste

1 cup

mashed ripe bananas (from about 2 medium/large bananas)

 cup coarsely grated zucchini, laid loosely in cup and not packed (don’t wring out)

1 cup

fresh blueberries (I haven’t tried with frozen)
