of evaporated milk

slices of good quality American cheese
1/12 cup
grated parmesan cheese
1 cup
shredded chipotle gouda
1 1/2 cups
shredded sharp white cheddar cheese
1/2 cup
the water from the pasta (reserve pasta water before draining)
1/2 cup
brown ale (I used Cigar City Maduro)
Salt and ground pepper
Smoked paprika and fresh cilantro for garnish
