large sweet potatoes, cleaned + cut into small cubes [you want to cut them small enough so they cook quickly and evenly]

large head cauliflower, cut into florets

large head broccoli, cut into florets

chickpeas, drained and rinsed

olive oil

sea salt

1/2 tsp

black pepper

1/2 tsp

garlic powder

turmeric

Herbs de Provence, or any dried Italian herbs you like
