Pork chops

High-heat cooking oil like grapeseed
We seared the chops in a heavy skillet before placing them in the oven on a roasting rack. We then deglazed the skillet to make gravy. It turned out really tasty! We just used salt and pepper to season the brined chops...nothing fancy.
