/ 170 g dry uncooked quinoa

2 cups

/ 480 mls water ((or 1 cup of water if you are using an Instant Pot))

large handfuls spinach (, shredded)

1 cup

/ 120 g dried cranberries

medium lemons (, zest and juice)

1 tbsp

/ 15 ml maple syrup (, real maple syrup not pancake syrup. Agave can be used as an alternative.)

2 tbsp

/ 30 mls extra virgin olive oil ((omit to make the recipe oil-free))

1/2 tsp

freshly ground pepper (, plus more to taste)

1/2 tsp

salt (, plus more to taste)
