Crispy Peanut Tofu: (If you don't like tofu, you could substitute chicken, pork, shrimp,or just leave the protein out)

Peanut Sauce:

creamy peanut butter (we use Whole Foods 365 brand organic, no added salt/sugar)

Mango Salsa:
