Cabbage Salad with Crispy Peanut Tofu and Mango Salsa

INGREDIENTS

Crispy Peanut Tofu: (If you don't like tofu, you could substitute chicken, pork, shrimp,or just leave the protein out)

block of sprouted, organic, extra firm tofu

TB avocado oil

1

TB reduce sodium tamari sauce

2 tsp

arrowroot powder or corn starch

Peanut Sauce:

1/3 cup

creamy peanut butter (we use Whole Foods 365 brand organic, no added salt/sugar)

TB reduced-sodium tamari sauce

TB honey or maple syrup

TB toasted sesame oil

1/2

lime, juiced

garlic cloves, minced

Mango Salsa:

ripe mangos

1

red bell pepper

green onions, chopped

1/3 cup

fresh cilantro, chopped

1/2

small jalapeño (if you are serving to kids you may want to leave out)

1/2

lime, juiced

1/4 tsp

salt

Salad:

head green cabbage, shredded
