Guinness Black Bottom Cupcakes Recipe

Irish Cream Cheese Filling:1 package (8 ounces cream cheese, softened1/3 cup sugar1 large egg¼ cup Bailey’s Irish Cream liquor*1/8 teaspoon salt1 cup semisweet chocolate chips, roughly chopped )

Guinness Cupcakes:2 eggs (room temperature2/3 cup sour cream3 teaspoons pure vanilla extract1 cup Guinness stout beer**1/2 cup butter, softened2 cups granulated sugar3/4 cup unsweetened cocoa powder2 cups all-purpose flour1 1/2 teaspoons baking soda )

*Can substitute another brand of Irish Cream liquor

** Important Tip - Pour the Guinness beer in a cup and let stand until all the foam and carbonation is gone and has flattened out.  Your cake will over expand and collapse while baking if you do not use flat beer.
