Grilled BBQ Chicken Rice Bowl

boneless skinless chicken breasts ((or thighs))

BBQ sauce (I recommend Sweet Baby Ray's)

Fine sea salt and freshly cracked pepper

1 cup

white basmati rice

2 cups

chicken broth, stock, OR water

large lime

2 tbsp

chopped cilantro

1 can

black beans, (drained and rinsed)

1 can

fire-roasted corn, (drained and rinsed (Note 4))

freshly grated sharp cheddar cheese

Additional limes/cilantro
