Turkey Enchilada Casserole

shredded leftover turkey (may use cooked shredded chicken as an alternative)

diced onion

diced red bell pepper

minced fresh oregano leaves or 2 teaspoons dried oregano

large can red enchilada sauce (I used three small 10 ounce cans good quality enchilada sauce)
