Cilantro, fresh

Red bell pepper, finely chopped

1/2 cup

Yellow onion, chopped

2 cups

Chicken broth, low-sodium

Coconut milk, unsweetened light

1 tbsp

Fish sauce

1 tbsp

Lime juice, fresh

3 cups

cooked rice (hot)

1 tbsp

Brown sugar

1/8 tsp

Cayenne pepper

1/2 tbsp

Curry powder

Salt and pepper to taste

2 tbsp

Olive oil


NOTES

  • Add heaping tsp yellow curry paste. Added potatoes and carrots instead of red peppers. Salt to taste also.
