unbleached all-purpose flour (plus extra for dusting work surface)

1 1/2 cups

whole wheat flour

honey

4 tbsp

unsalted butter (melted and cooled slightly)

2 1/2 tsp

instant yeast

1 tbsp

table salt

3/4 cup

pumpkin seeds or unsalted sunflower seeds ((I used sunflower seeds))

1/2 cup

old-fashioned rolled oats or quick oats
