Two Bean Enchilada Casserole

cauliflower rice*

chili powder

kale, chopped

OR 1 (15 oz) can of BPA- Free, no salt added black beans, drained and rinsed

2 cups

frozen corn

3 cups

cooked OR 2 (15 oz) cans of BPA- Free, no salt added pinto beans, drained and rinsed

1 cup

raw cashews

corn tortillas (will depend on the size)

~2-3 cups no salt added salsa

Cilantro, as needed
