NOTES
I used one big chicken breast chopped pretty small. And more than 1/4 cup pesto. Probably at least 1/3. And more than 1/4 cup fresh grated Parmesan and extra sprinkled on top at the end. All the kids didn’t like the crunchy topping. I used Italian panko crumbs (and more than 1/2 cup to go with that amount of butter) so next time I’ll keep the topping to one side. I baked in 9x11 pan.
