Mexican Chicken, Sweet Potato and Black Bean Skillet

olive oil

1 lb

boneless skinless chicken breasts, cut into bite sized pieces

1/2 cup

diced yellow onion

1 tsp

ground cumin

1 tsp

chili powder

1 tsp

dried oregano

3/4 tsp

kosher salt or to taste

1/4 tsp

granulated garlic

1/4 tsp

fresh ground black pepper


sweet potato, peeled, par-cooked and diced (see note on par-cooking)

1 cup

cherry tomatoes, halved

15 oz

can black beans, rinsed and drained

4 oz

can diced green chiles

1/3 cup

salsa or red enchilada sauce

1/2 cup

shredded cheddar cheese or colby jack cheese


lime, juiced

1 tbsp

chopped cilantro (optional)


  • This was really delicious and easy. I added corn to it. I served it with homemade baked flour tortilla chips.

  • We used onion powder instead of diced onions to make it even faster. Tastes great!
