Quick And Easy Low-Sodium Tomato Soup

canola oil or other healthy oil

medium onion yellow, diced

3 cloves

garlic minced, or use 1 tsp garlic powder

1 28 ounce can

tomatoes diced, no salt added, undrained

2 cups

chicken broth low sodium, I use Trader Joe's brand

1 cup

coconut milk lite

6 oz

tomato paste (1 small can or 10 tbsp)

1/2 tsp

salt

1 tsp

black pepper ground

1/2 cup

fresh basil minced, or you can use 3 tbsp. dried, but it doesn't taste the same
