This turned out great. Simple and easy way to make chicken and rice. I didn’t love the Thyme in the rub, but that’s just a personal preference. I like that I can use this method for whatever chicken rub I choose. I used breasts and followed her note on using breasts instead of thighs. It worked out pretty well, but I should have added the chicken in after 20 minutes instead of 30. Some of the rice was a little too crispy by the time it was all done.
