{One Pan} Mexican Rice Skillet

ground turkey or beef

salt and black pepper (to taste)

jalapeno (cored, seeded and diced (optional))

uncooked long grain white rice (you can also use minute or brown as well and adjust the cooking time)

1/2 cup

canned black beans (drained and rinsed)

1 cup

corn kernels (frozen or canned)

1/2 cup

sweet peas (frozen or canned (optional))

1 14 ounce can

fire-roasted diced tomatoes, undrained

2 1/4 cups

low sodium chicken broth

2 tsp

cumin

1/2 tsp

smoked paprika

1 tsp

chili powder (or to taste)

1/4 tsp

cayenne pepper (or to taste)

1 cup

or more as desired of shredded colby-jack or cheddar cheese
