• 2½ tsp baking powder

• ½ tsp baking soda

• ½ tsp salt

• zest of 1 lemon

• 250 ml/ 1 cup mascarpone (chilled)

• ¼ cup icing sugar

• 175 ml/ ¾ cup double cream

• 1 tsp vanilla bean paste

• 2 cups strawberries (quartered)

• ½ cup sugar
