canned dark red kidney beans (drained (you can substitute black or pinto beans if you prefer))

Rotel tomatoes

uncooked quinoa (rinsed and drained in a fine mesh strainer)

shredded Mexican-blend cheese, sour cream, sliced green onions ((optional))
