Caramelized Butternut Squash Soup with Avocado Cream

For the Soup:

avocado oil

real salt

large sweet onion

bunch fresh thyme (about 6 sprigs)

black pepper (OMIT FOR AIP)

coconut oil or avocado oil

5 cups

chicken stock (or other quality bone broth)

1 cup

filtered water (depending on how thick or thin you want the soup)

Avocado Cream

ripe hass avocado (you can use two if they are small or you want a greener color!)

1 cup

soaked cashews (SUB COCONUT CREAM FOR AIP)

lemons, squeezed

2 tbsp

Primal Kitchen Extra Virgin Avocado Oil

1/2 tsp

salt (more to taste)

1/2 tsp

black pepper (more to taste) (OMIT FOR AIP)

minced parsley, basil or cilantro also work (mince extra for garnish)
