Black beans, drained and rinsed
canned diced green chiles
White onion, small
Salt and pepper
avocado or olive oil
Flour tortillas, large
Mexican-blend shredded cheese
Enchilada sauce, red (homemade preferred)
Be generous with mild enchilada sauce or buy an extra can to put on top of individual servings.

I sometimes make these with carnitas I make in the crock pot as well. Delicious!
