Bacon Corn Chowder

slices bacon, crisped & crumbled; divided in half

medium sweet yellow onion, diced

garlic cloves, minced

all-purpose flour

unsalted vegetable or chicken broth/stock

bay leaves

1/4 tsp

dried thyme

1/4 tsp

dried parsley

1/4 tsp

dried chives

1/4 tsp

ground nutmeg

1 tsp

Kosher salt

1/2 tsp

freshly ground black pepper

1/2 tsp

smoked paprika

1/8 tsp

red pepper flakes, optional

medium Yukon Gold potatoes, peeled & diced

Half ‘n half

6 cups

corn kernels, (approx. 8 ears of fresh corn) or a 28.8 oz. bag of frozen corn

Garnish with crumbled bacon, chopped fresh parsley and a couple of dashes of Smoked Paprika or nutmeg
