This is a great recipe to meal prep- I messed up and mixed the full cup of chimichurri with the mayo and saved some before marinating. Used extra sauce to sauté green beans, bell peppers, onions, and shredded cabbage. Both the veggies and chicken are great over a bed of quinoa!
