Flourless Banana Choco Chip Zucchini Blender Muffins

Oat flour or oats

2 tbsps

Flax meal

2 tbsp s

Chia seeds

1/2 tsp

to 1 tsp Cinnamon

1/4 tsp

Nutmeg

2 tsps

Baking powder

1/2 tsp

Baking soda

1/4 tsp

Sea salt

2 larges

Bananas

2

Eggs (or egg substitute)

2 tsps

Vanilla extract

6 tbsps

Pure maple syrup or unfiltered raw honey

6 tbsps

sunflower seed butter or almond butter (no sugar added kind)

1 cup

Shredded and squeezed dry zucchini (chop if using zoodles)

1/2 cup

Dark chocolate chips (72% or higher)


NOTES

  • So yummy you’ll want to double it and have some in the freezer. Doubling means 24 regular size muffins. A quarter cup of batter per muffin. I use Bob’s Red Mill Egg Replacer.
