Spicy Homemade Pulled Pork Ramen.

shitake mushrooms

garlic cloves, minced

low-sodium chicken stock (or veg stock, or even beef stock!)

soy sauce

1 tbsp

hoisin sauce

blocks dried ramen noodles, seasoning packets removed

scallions, sliced

seedless cucumber, thinly sliced (I like to use a mandolin for this)
