chopped fresh parsley (, plus more for garnish)

uncooked long grain white or brown rice ((I've tried and like both))
Cheddar or mozzarella cheese (, for serving (optional))
Add two peppers for extra veggies. Used two cups beef broth.
Used 2/3rds a pound of ground beef, one of each pepper and doubled the liquid. Tasted great! Joseph even ate everything
