Of all the Instant Pot recipes I’ve posted, this is my favorite main dish. It’s perfect for gatherings large and small. I serve this with tortilla chips, cooked rice, grilled flour or corn tortillas, cheese, black beans, shredded lettuce, tomatoes and guac or chopped avocado. Everyone can make their own burrito, taco, salad or rice bowl. One dish that everyone loves! Of all the Instant Pot recipes I’ve posted, this is my favorite main dish. Loved it! Tastes amazing--not spicy-- and the meat turned out perfectly tender and juicy, which isn't my typical experience with Instant Pot. Next time I will increase the spiciness and will add more lime.
We made this for a family party, and it was really good! It does require quite a bit of effort to trim and cut the meat, roast the peppers, brown the meat, etc. so make sure you have plenty of time before you dive into making it. The end product is worth the effort. 😋 🌶
Delicious but very soupy. We made burritos with it and it didn’t really work but I agree with using it for enchiladas or even on top of Mexican rice. 👍🏼👍🏼
I like the idea of this but I did it the lazy way and found some tomatillo sauce and just cooked it with that, instead of the fresh stuff. Family really liked it!
