active dry yeast

8 cups

warm water + 2/3 cup baking soda

1/2 cup

butter, melted

Egg wash: 1 egg + 1 tablespoon water

For salted pretzels: use kosher salt,

For cinnamon sugar pretzels: 1 cup granulated sugar and 2 tablespoons ground cinnamon
