INGREDIENTS

pork tenderloin
1 TB
oregano
2 tsps
cumin
1 TB
avocado oil
1 half
yellow onion, diced
3 cloves
garlic, minced
1 whole
jalapeño, diced (remove seeds for more mild flavor)
1 whole
orange (zest and juice)
1 whole
lime (zest and juice)
1 bag
corn tortillas (or chips for nachos)
1 bag
shredded cabbage (or slaw)
1 jar
mango salsa (for topping)
1 whole
avocado (for topping)
1 container
Siggi's plain yogurt (as sour cream substitute topping)
NOTES
I like to take my portion of meat and some of the juices and add it to a skillet on medium-high for about 5-7 min right before I eat it. This adds a nice crispy texture to it!
*Pork Shoulder would be a great option as well!
