bread flour

everything bagel seasoning (optional)
salt (optional)
poppy seeds (optional)
shredded cheese (optional)
NOTES
we like bigger bagels so we don't get the full 8 from the batch. use 525g flour. dough was too sticky and flimsy with 500g. bake for 20-22 min. cooking spray works better than parchment. 20% inoculation, 49% hydration, 8% honey, 2.5% salt
