Very very easy, I think it would benefit from a second rise, mine was dense, but perhaps I accidentally knocked out too much air while shaping!

We cooked ours in a dutch oven vs putting a pan of water in the oven to create steam. It turned out great! We let ours rise for about 3 hours.
