Brown Butter Salted Caramel Snickerdoodles

2 1/2 cups

all-purpose flour

1 tsp

baking soda

2 tsp

cream of tartar

1/2 tsp

ground cinnamon

1/2 tsp

sea salt

1 cup

unsalted butter, sliced

1 1/4 cups

dark brown sugar

1/2 cup

granulated sugar


large egg


egg yolk

1 tbsp

vanilla extract

1 tbsp

plain Greek yogurt

About 1 cup caramel squares, cut into 1/4’s (if using Trader Joe’s Fleur de Sel Caramels cut them in half, I like these because they are softer)

1/4 cup

granulated sugar

2 tsp

ground cinnamon

Sea salt, for sprinkling on top of cookies


  • I sub 1 cup of flour with bread flour to make them extra chewy. I also add an extra 1/4 cup AP flour because I’m in high altitude. You can leave out the caramel if you don’t have time, they’re still delicious!
