process/beat again until and fluffy. set aside
1/4 cup
granulated sugar
1 tsp
tapioca starch
1 pinch
thyme leaves
1 serving
top the almond cream
1 pinch
fold the edges of the pastry around the fruit
1 serving
beat the reserved egg white
1 serving
bake in the preheated 400˚f oven
1 rack
remove to a to cool. the galettes are best served the day they are baked
