NOTES
Subbed with brown rice and cooked for 15 minutes. Subbed with unsweetened plain almond milk. Stirred in steamed broccoli and no cheese. It was great!

Recipe made enough for 2-3 people with a small bag of leftovers. I would double the recipe in the future.

It was great but the instructions were unclear. It called for 2 1/2 cups of chicken broth to cook the rice all the way but only specified a 1/2 cup in the instructions. If cooked right, it is an amazing dish.
