Better-than-takeout chicken fried rice

INGREDIENTS

Chicken breasts

4

Carrots

2 cloves

Garlic

Onion

1/2 cup

Peas, frozen

Eggs

1/4 cup

Soy sauce

1 cup

Rice

3 tbsp

Sesame oil


NOTES

  • Prepare 1 cup rice with two cups water in a rice cooker or on the stovetop. Meanwhile, heat sesame oil in a large skillet over medium heat. Add onion, garlic, peas, and carrots. Cook for 5-7 minutes. Crack eggs into pan and scramble, mixing with vegetables. Add rice, chicken, and soy sauce to pan. Stir to combine and remove from heat.

  • Use 1 tbsp butter instead of 3. Use 4 eggs instead of 2.

  • 4 tbsp sesame oil, 4 cloves garlic, 1/2 c peas and carrots plus 1/2 c frozen corn, 3 tbsp soy sauce and 1 1/2 c rice. Delicious!!
