gradually increase the speed of the mixer and continue beating until the egg whites have increased in volume

gradually beat in
1/4 cup
gently fold in the flour/sugar blend at a time

spoon the batter into an ungreased 10" round angel food pan. gently tap the pan on the counter to settle the batter and remove any air bubbles

gently smooth the batter in the pan. it doesn't need to look perfect; just get rid of some of the larger peaks and valleys
