dry-pack strawberries [not in sugar

cornstarch

whipping cream

food coloring

generously butter bottom and sides of a 9" springform pan

melt the margarine in a microwave safe bowl

stir in graham cracker crumbs and sugar

press into bottom of 9" springform pan

set aside. no need to pre-bake the crust

pulse the strawberries in food processor until smooth. you need puree

stir in of cornstarch and set aside to thicken slightly

beat the cream cheese in bowl of an electric mixer until creamy

increase speed to and add the sugar and cornstarch

fold in strawberry puree plus food coloring if using. add enough coloring to make the batter pink

gently spoon batter into springform

if using water bath

bake the cake in 350f oven until edges are golden brown and top is set
