bell peppers
1 1/2 cups
onion

garlic

parsley

1/2 cup
cider vinegar
1/4 cup
lime juice
1 rack
blanch your tomatoes in water just long enough that their skins start to c and slightly peel. then immediately put them in ice water. remove the skins

ladle salsa into sterile leaving 1/2” headspace
