Baked Asian Tilapia Stir-Fry

Sauce:

1/4 cup

low-sodium soy sauce or liquid aminos

2 1/2 tbsp

maple syrup or honey

1 tsp

fresh ginger, grated (or powdered ginger)

1/2 tsp

minced garlic (or garlic powder)

2 tsp

sesame oil

2 tsp

rice vinegar

1/2 tsp

(more or less, to taste) Thai Chile Garlic Paste, Sambal or Sriracha

1 tsp

cornstarch

Stir-Fry:

large carrots, grated (on the large side of the grater)

red bell peppers, thinly sliced

green onions, cut into 1-inch long pieces

tilapia filets, about 4 oz each, 1 lb total (fresh or frozen - if frozen, no need to thaw!)

salt and pepper, for seasoning

chopped cilantro, as much as you like!
