21 Day Fix One Pan Thai Shrimp and Vegetables {Swimming Rama}

carrots, spiralized or thinly sliced (if spiralized, 2 cups packed)

2 cups

red bell pepper, thinly sliced (2 peppers)

2 cups

fresh spinach (packed)

1 lb

raw shrimp, peeled and deveined

salt and pepper for seasoning

cilantro, chopped (as much as you like!)

Sauce:

1 14 ounce can

of full-fat coconut milk

1 tbsp

raw sugar

4 tsp

creamy peanut butter

1 tbsp

low-sodium soy sauce

1 tbsp

chili paste - like Sambal Oelek - found in the Asian foods aisle, or sriracha (just know that if you're 21 Day Fixing, regular sriracha isn't technically approved, but you can try this one instead!), to taste
